Bagels


Ingredients:

For the dough:

  • 4 cups bread flour (or all-purpose flour)
  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 ½ tsp salt
  • 2 tbsp granulated sugar
  • 1 ¼ cups warm water (about 110°F or 43°C)

For boiling:

  • 8 cups water
  • 2 tbsp brown sugar or honey (for sweetness)

Optional toppings:

  • Sesame seeds, poppy seeds, dried onion, garlic flakes, or coarse salt

Instructions:

Step 1: Make the Dough

  1. Activate yeast: In a small bowl, mix warm water and sugar. Sprinkle the yeast over the top, let it sit for 5–10 minutes until frothy.
  2. Mix the dough: In a large bowl, combine flour and salt. Add the yeast mixture and mix until the dough forms a shaggy ball.
  3. Knead: Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook.
  4. First rise: Place the dough in a greased bowl, cover with plastic wrap or a damp towel, and let it rise in a warm place for 1–1.5 hours until doubled in size.

Step 2: Shape the Bagels

  1. Divide the dough: Punch down the dough and divide it into 8 equal pieces. Roll each piece into a smooth ball.
  2. Shape the bagels: Poke your thumb through the center of each ball to create a hole, then gently stretch the dough into a ring. Place them on a parchment-lined baking sheet and cover loosely. Let them rest for 15–20 minutes.

Step 3: Boil the Bagels

  1. Prepare the water bath: In a large pot, bring 8 cups of water to a boil. Stir in brown sugar or honey.
  2. Boil the bagels: Add the bagels (2–3 at a time) to the boiling water. Boil for 30 seconds on each side. Remove with a slotted spoon and place back on the baking sheet.

Step 4: Add Toppings (Optional)

  1. Brush boiled bagels with an egg wash (1 beaten egg + 1 tbsp water) for shine.
  2. Sprinkle your favorite toppings like sesame seeds, poppy seeds, or coarse salt.

Step 5: Bake

  1. Preheat oven: Preheat the oven to 425°F (220°C).
  2. Bake: Bake the bagels for 20–25 minutes until golden brown.
  3. Cool: Let them cool on a wire rack before serving.
